Method

  1. In a blender, combine all the ingredients for the chimichurri sauce, and set aside.
  2. Slice the steak into 1cm strips. Toss with a little bit of olive oil, cumin and oregano and then lightly fry in a skillet until brown.
  3. In four separate bowls divide the steamed rice, avocado, beef, fresh shallots and corn kernels (optional). Drizzle with chimichurri sauce and serve with a slice of lime.
