Sweet Soy Minute Steaks with Radish & Sesame Salad

Method

  1. Marinate the beef: In a bowl, mix soy sauce, mirin, sake, sugar, and garlic. Add steaks and toss to coat. Set aside while cooking rice.
  2. Prepare the salad: Wash and slice radish. Crush cucumber lightly in a tea towel and chop into bite-sized pieces. Combine with soy sauce, vinegar, sesame oil, sesame seeds, spring onion, salt, and garlic. Toss gently.
  3. Cook the steaks: Heat a large pan over high heat until smoking. Remove steaks from marinade and pat dry. Add oil and cook for 1 minute per side. Remove from pan.
  4. Pour remaining marinade into the hot pan and reduce to a glaze. Spoon glaze over the steaks.
  5. Serve steaks over steamed rice with a generous helping of radish and sesame salad.

Tips

  1. Add a little sugar to marinades for quick-cooking steaks - it helps caramelise the surface beautifully.
  2. Start cooking rice first since it takes the longest.
  3. For extra tenderness, use minute steaks or slice tenderloin in half.
