  1. For the salsa verde, blitz the herbs in a food processor with the garlic, anchovies, capers and lemon until finely chopped. With the motor running, drizzle in the olive oil, adding extra if too thick. Stir in the hard boiled egg, check for seasoning then set aside.
  2. To make the salad, simply combine all of the ingredients together in a large bowl and toss to ensure everything is well coated with the dressing. Season to taste.
  3. Coat the flat iron steak with olive oil and season generously with sea salt. In a very hot pan, cook the steak for around 4 minutes on each side. The steak should be nicely coloured and medium rare on the inside. Allow to rest for 5-7 minutes then slice and serve with the salsa verde and winter salad.
