In a medium bowl place cannellini beans and olive oil. Season, crush beans with the back of a fork and stir to combine.
Warm tortillas according to packet instructions. Spread base of tortillas with crushed beans. Top with lettuce, tomatoes, cucumber, capsicum, carrots, onion and beef. Dollop with pesto and sprinkle with goats’ cheese and herbs. Roll up tortillas to enclose filling and serve with lemon wedges.
Tips
For a healthy option choose a wholemeal, wholegrain or spinach wrap. Or omit the wrap and load up a bowl with all the ingredients for a delicious healthy salad.
Swap the beans for hummus or tzatziki or add some chickpeas, lentils or different beans to mix it up.
